The knight lands on e5 and attacks both c6 and g6. Because the bishops sit on the same rank they cannot defend each other, so after 1...Bd7 saves one, 2.Nxg6 wins the other outright.
The knight is the ideal forking piece: it attacks in a shape no other piece can block or shield against. Look for two enemy pieces on the same colour of square, a knight’s-move apart, with an outpost between them.
